We went out to Perris today to visit my lil’ bro & the family to celebrate his birthday. I can’t believe my little brother is thirty years old! It’s pretty amazing to think that he is appoaching his 10th wedding anniversary and has 5 children at his age! I’m an extremely proud big sister – he is a good guy and a great dad…and I am happy to see him so happy in his life.

It had also been too long since we got to spend some quality time with the kids. They were as cute as always. They just love their Uncle Ed:

Ethan can be such a stinker. He runs and hides as soon as he sees the camera come out. But we managed to get a half-picture of him in the backyard:

And Miss Ella is growing…she gets cuter everytime we see her!

We also got a chance to look through Kendall’s sketchbook. At just 9 years old, she’s got quite a thick book, and she is so smart! We got a real kick out of this chart she made:

We know its kinda hard to see, but she has listed that she is 50% white, 25% samoan and 25% “chinees thai”. That kid just melts our hearts. She really does.

Korean Cooking Lesson, number one.

Yesterday we went to Mom’s for a wonderful lesson in Korean cooking. The goal was to learn how to make bulgogi, which is a most scrumptiously marinated, thin, flank-type steak. It’s delicious. We were anxious to learn – Carrie’s gotta know how to make the husband’s comfort food, and Ed enjoys cooking too! In true Korean-mom fashion, she prepared an enormous lunch first before the cooking began – but we certainly weren’t complaining!

Bulgogi ended up being a lot easier to make than we thought…it’s basically onions, sesame oil, soy sauce, sugar, and more green onions! We made so much that mom insisted we take home 2 large tupperware boxes full of individually bagged portions. We’re knee-deep in bulgogi now, so ya’ll come on over and try it before we end up with record setting cholesterol from eating red meat everyday! We had a great time though and we really enjoyed the lesson.

Here is tonight’s dinner:

That’s the bulgogi in the bowl, on top of rice. To the right, we have bindedduk, which are Korean pancakes made out of egg, onions, kimchi and seafood…and the green stuff is our favorite: sauteed spinach.

Look at Ed…so happy!

Carrie feels pretty proud of herself – yum!

This past Christmas, Carrie’s parents decided to send the kids & the spouses to see Wicked (the Musical) and have a swanky pre-theatre dinner at Lawry’s Prime Rib. The four of us agreed that it was a pretty slammin’ gift! Yesterday we finally got to redeem our gift, and it didn’t disappoint – the show was absolutely fantastic and the dinner (of course) was superb. We were pretty excited about the evening of course, but we were even more excited to spend some “adult time” with Eric & Shirley (having 5 kids means they don’t get to be sans-children very often!). We talked, told stories & laughed without being distracted by the kids (don’t get us wrong – we love to see the nieces & nephew!). We had a really good time and got a kick out of seeing Eric & Shirley enjoy the show so much.

Welcome to the Family, Ella!

Well, today was the day that the newest kid joined our clan. Elena Rose arrived this morning at 8:19am. She was 8 lbs., 15 oz! Ed was very cute this morning – he proclaimed, “I’m an uncle!” He says this time was different as he “married in” to be an uncle to the other 4… :)

Here’s our girl:

Now the next thing my brother has to do is find a reliable old church bus or something to transport his family in. With kid #5, they have officially outgrown the mini-van. Wow.

Yay for the (happy, newly-expanded) family!
