The Kims’ Christmas Ham…Part 1

As some of you know, Carrie and I have spent much of this past year learning to become better cooks. It’s been a very fun learning experience and the end result is that we now eat much healthier with much greater enjoyment than ever! Since we got married, we’ve always hosted Christmas Eve dinner for my side of the family, and this year is no different. However, there will be a very significant change to the menu now that we are much more ambitious cooks: no pre-cooked store-bought ham that you just merely heat up like in years past. No way, José – I’m brining my own fresh pork leg and making us a Christmas ham!

I didn’t – and still don’t to some degree – know what to expect as I’ve never done this before. But thanks to this recipe I found in Food & Wine magazine, I think I’m in good hands here. Chili-brined fresh ham, it says. Ok then – I’m going for it!

This will be a multi-part series as we’re still two days before Christmas Eve and making this ham from scratch is a two-day affair. Today’s part was making the brine and putting the giant 22 lb. hunk of pork leg into it! So how did it all go? Well, something like this.


Here are the doings for the brine: water, Kosher salt (for a swine dish, no less), sugar, serrano chilis, cloves, and peppercorns.

After much boiling of the water/salt/sugar mixture, mixing the chilis, peppercorns, and cloves into the mix! Yes, given the massive size of the pork leg, I had to go out and buy a party drink bucket from Smart&Final to get it all to fit.


Why am I rolling up my sleeves?


So I can deal with this giant pork leg! It’s huge, heavy, and its skin feels really weird… I had to special order this bad boy as it’s not something grocery stores typically have in stock.


And here it is in the brine, where it will remain for the next day and a half!


As you can see, it really is huge – it takes up the entire bottom shelf of the fridge.

Christmas Goodies!

In the spirit of keeping traditions alive (and having lots of fun getting into the holiday spirit), Mom & I collaborated once again to do a little holiday baking. We decided on sticking with cookies this year. My all-time favorite flavor of the season is Peppermint, so I had to break out Martha’s recipe for Chocolate Peppermint Cookies! Also on the agenda were big and soft bakery-style Sugar cookies with red sugar on top. For good measure, Mom also decided to whip up some Peanut Butter cookies and Pumpkin Spice cookies!

Yes, I enjoy the baking – but I have to admit that part of me does it only to have an excuse to come up with the packaging! This year, I went with craft-brown cupcake boxes, layered the bottom with red/white polka dotted vellum paper, stacked 8 perfectly shaped cookies on top of each other and tied them up with red and white bakers twine. Then, I added round stickers to the outside (alternating between red and white) and made a tag to keep things simple that just said YUM!

Both mom and I agree that Martha’s recipe is a little labor-intensive, but they sure are YUMMY. (They certainly were not as simple as last year’s goodies). The cookies are really soft and super chewy like fudge – and combined with the crushed peppermint candies in the mix, we think they are a perfect companion to your morning cup of coffee!

More Baby Shower Crafts!

On Saturday, I was lucky enough to be a part of Jennifer Shrier’s Baby Shower! I volunteered to make the favors, and we decided on making a CD. The theme of the baby shower was a Mama Bird/Baby Bird, “nesting” theme, so all of the tracks on the CD had to do with birds in some way. Here’s a few shots of how the favors turned out:


As usual, I also knew I wanted to make a diaper cake. Ever since I found out Jen was pregnant, I knew I wanted to buy her these kitty Mary Janes for the top of her cake! This is how it turned out:

And of course, the amazing Joni Newman made the cake and the cupcakes. This was her first time using fondant, and I think she did an outstanding job! Joni can do anything she puts her mind to, and I am very proud to know her! Here’s a shot of her cake and cupcakes – all vegan and delicious!

Overall, it was a fantastic day. We all even got to make our own onesies at the shower! Our host Elizabeth Arzate had the great idea and she rounded up tons of fabric swatches, felt, stamps, paints, and ribbon for us all to make our own creation.

Lemon Cake Craftiness

To celebrate Danna’s upcoming wedding, of course we had to throw her a bridal shower.  I was lucky to have co-hosted the shower with her cousin, and fellow bridesmaid, Colleen and Danna’s Aunt Mary.  In honor of the bride, I decided to make mini-Lemon Cakes, as Lemon Cake is Danna’s favorite dessert.

To begin, I found these awesome mini-loaf pans from BakeItPretty.com.  I LOVE this site – so many amazing things, because presentation is just as important to me as the taste!

There were 50 guests, so I needed to make 50 Lemon Cakes …

Then, I made little tags to go with the cakes:

And finally, the finished products!

My only regret is that I failed to get a picture of the bride and a lemon cake!  Congratulations, Danna!

When Carrie gets Crafty …

Our friends Crystal & Jason are having a baby boy in April, so I thought it would be fun to throw a shower so we could all buy them some really hip baby boy stuff!

As soon as the date was decided, my mind immediately went to party favors – and I decided to try my hand at some fancy-schmancy cupcakes. I started googling to find great food packaging ideas, because as a designer, I also think about presentation! In my search, I came across these darling cupcakes from Fancy Flours and I knew I had to incorporate that wrapping somehow!

Lucky me, once I told my dad about my plan, he offered to help. He contributed some of his homemade frosting from his famous cakes, and a little icing help. Thanks, Dad!

After the icing was done, it was time to embellish! I found the cutest little cardboard patterned animals from Martha Stewart … they were too awesome to pass up, so I worked them into the motif:

The final touch was getting them wrapped in their individual cupcake boxes … they were favors afterall, so I needed them to be easy for people to take home with them!

Rhinoceroses, elephants, bears, ducks, horses, kitties …

I also decided to make another diaper cake, because I like the fact that it’s a gift that’s sure to be used. This one had 70 diapers in it, and a pair of Black Chucks on top!

Both Ed & I are really excited for Jason & Crystal and we can’t wait to meet the new little man!
